Homemade veggie stock from kitchen scraps.
Here's a quick photo of my veggie stock jar. It's currently in a transition phase, where it has a little big of liquid stock, alongside a bunch of veggie scraps waiting to be boiled up. It lives in the freezer and whenever I have scraps to add, I just toss them in. Currently, I have spinach stems, onion skins, garlic skins, and the water left from cleaning onions for pickling. When it gets full, I'll leave it to defrost, then tip everything into my pressure cooker/ instant pot with some salt, pepper corns, bay leaves and curry leaves. Once I've got all the goodness out of the veggies they'll go into the compost, and the jar will go back into the freezer with just the liquid.
Super easy, super cheap, super healthy. And totally waste free! 🌱🌠
