Emirati luqaimat/ Beignets / churros are addictive, deep fried recipes which are fermented with yeast and absorb little to no oil. That being said, I was inspired to create something that would honor them. Here is my coconut and sesame dumplings recipe:
1) 2 cups of plain flour
2) 1 cup of wholewheat flour
3) 1 cup sugar
4) 2 1/2 cups of warm water
5) 1 teaspoon of yeast (I used @safinstantme)
6) 1/2 teaspoon of salt
7) 2 tablespoons of roasted sesame seeds ( roast them on high for 5 minutes in the microwave)
8) 1 cup of freshly grated coconut
9) oil for frying
10) Dates syrup as desired
In a large bowl, possibly see through to see the fermentation process, add both the flours, sugar, salt, yeast and combine the dry mixture. Gradually add the water slowly till you have a thick paste. Cover with cling film, keep it somewhere warm and let it rise for two hours.
In a deep wok, add the oil and heat it on a medium high flame. Take two spoons and scoop a bit of the mixture into one spoon and with the help of the other, scrape the mixture into the oil in the form of a sphere. Repeat for all the dumplings and turn them over for even browning on both sides. Place them on a plate after cooking and serve them with lots of drizzled date syrup. Enjoy!
